Why Must shellstock tags be retained for 90 days ?
Because some diseases (like Hepatitis A and Vibrio) that could come from shellfish can take a month or longer to show up. By saving the tags, the restaurant can show that they obtained the shellfish from approved waters. This will also help track the cause of any foodborne outbreak that might be related to shellfish.
